In February 2007, Lee attended two basic seminars offered by the ASBTDC at the University of Arkansas, Fayetteville, "Starting a Business in Arkansas" and the "SBA Loan Workshop." One year later, his own restaurant, Spiedini Italian Grill, was in business.

Larry Brian, University of Arkansas, Fayetteville, ASBTDC center director, assisted Lee in writing his business plan and completing a successful Small Business Administration loan package through Liberty Bank. In its first year of operation, the restaurant was voted the number one casual dining experience in Northwest Arkansas by Celebrate magazine. The UAF ASBTDC continues to consult with Lee on management, Web site development, and marketing.

Spiedini employs 12 people and has been contracted to provide food for the 2009 Arkansas Razorback football team.
